The Best Breakfast Fried Rice
Fried rice is a super easy, affordable and tasty meal where you can add anything you want to it! You can use any kind of rice you like or have around the house. My favorite rice to use is Short grain sushi rice. I have a rice cooker, but you can always just cook the rice on your stovetop. IF you are cooking rice on the stovetop, always add a little oil to help it from not sticking too much.
PRO TIP– Always use COLD rice! Fresh, warm rice doesn’t fry well, and tends to get clumpy and soggy. I usually try to make it the night before.
The Best Breakfast Fried Rice with Spam
Equipment
- Wok or large fry pan
Ingredients
- 3 cups cooked cold rice
- 1 medium shallot diced
- 2 cloves of Garlic minced
- 1/2 cup shelled edamame usually found frozen
- 3 eggs scrambled 4 more for soft boiled (optional)
- 1/2 can Spam diced sub 6 slices bacon diced, if you don't have any Spam
- 1 green onion thinly sliced
- 2 tbsp butter or Avocado oil
- 2 tbsp low sodium Tamari or Soy sauce
- 1 tbsp sesame oil
- 1 tsp black pepper
- 1 tsp black sesame seeds (optional)
- 1 tbsp Japanese Mayo (Kewpie Mayo) optional
Instructions
- Scramble the eggs in the Wok or Pan on Medium heat. cook until lightly scrambled, remove and put on a plate to the side.
- add the Spam and cook until light brown
- add in shallots, garlic and shelled edamame, sauté for a few minutes
- add the cold rice and butter in, Keep mixing until well combined
- add the scrambled eggs back in.
- Pour in Tamari and sesame oil and keep mixing for 1-2 more minutes. Turn off the heat. Top with black sesame seeds. now it's READY TO EAT!
- OPTION #1: mix in 1 tbsp of Kewpie mayothe mayo adds another savory touch to the rice. Don't knock it until you try it!
- OPTION #2: bring 4 cups of heavily salted water to a boil. add in 4 eggs, Boil for 7 min. Remove and put directly into an ice bath. Take the shell off and place at the top of rice, cut in half. It will look irresistible!
